1. Muddle Mint: In a silver or pewter cup, muddle 8-10 fresh mint leaves with 1 tablespoon of sugar and a splash of water to release the mint oils.
2. Add Bourbon: Pour 60ml of bourbon over the muddled mint mixture.
3. Fill with Ice: Fill the cup with crushed ice.
4. Stir: Stir gently to combine the ingredients and chill the drink.
5. Garnish: Garnish with a sprig of fresh mint.
